  • 2 lbs chicken wings split, tips removed
  • 1 tbsp baking powder not baking soda
  • 1 tsp salt
  • ½ tsp black pepper
  • ½ tsp garlic powder
  • 1 tbsp olive oil or neutral oil

  • 1 Wire rack For elevated baking
  • 1 Mixing Bowl For tossing wings
  • 1 Tongs or spatula For turning wings

Method
 

  1. Preheat oven to 425°F (220°C). Line a baking sheet with foil and place a wire rack on top.
  2. Pat chicken wings dry thoroughly with paper towels.
  3. In a large bowl, toss wings with baking powder, salt, pepper, garlic powder, and oil until evenly coated.
  4. Arrange wings in a single layer on the rack, skin side up.
  5. Bake for 45 minutes, turning halfway, until golden brown and crispy.
  6. Let wings rest 5 minutes before serving.
  7. Serve as-is or with your favorite dipping sauce.

Notes

  • For extra crispiness, refrigerate wings uncovered for 1 hour before baking to dry out the skin.
  • Use parchment or foil for easier cleanup.
