In a large bowl, combine olive oil, lemon juice, minced garlic, thyme, paprika, salt, and pepper.
Toss the chicken and halved potatoes in the mixture until evenly coated.
Arrange the chicken skin-side up and the potatoes cut-side down on the tray.
Bake for 40–45 minutes or until the chicken reaches an internal temperature of 165°F and the potatoes are golden and crispy.
Remove from the oven, sprinkle with fresh parsley, and let rest for 5 minutes before serving.
