Ingredients
  

  • 4 pieces bone-in chicken thighs skin-on preferred
  • 1.5 pounds baby potatoes halved
  • 3 tbsp olive oil
  • 1 tbsp lemon juice
  • 4 cloves garlic minced
  • 1 tsp dried thyme
  • 1 tsp paprika
  • To taste salt
  • To taste pepper
  • 1 tbsp fresh parsley chopped for garnish

Method
 

  1. Preheat the oven to 400°F (200°C) and lightly grease a baking tray or casserole dish.
  2. In a large bowl, combine olive oil, lemon juice, minced garlic, thyme, paprika, salt, and pepper.
  3. Toss the chicken and halved potatoes in the mixture until evenly coated.
  4. Arrange the chicken skin-side up and the potatoes cut-side down on the tray.
  5. Bake for 40–45 minutes or until the chicken reaches an internal temperature of 165°F and the potatoes are golden and crispy.
  6. Remove from the oven, sprinkle with fresh parsley, and let rest for 5 minutes before serving.

Notes

  • Bone-in thighs give the most flavor, but chicken breasts or rotisserie chicken can also be used.
  • Baby potatoes do not need peeling; just wash them well.
  • Store leftovers in the fridge for up to 4 days or freeze for up to 2 months.
  • For extra flavor, squeeze fresh lemon over the chicken before serving.
