Preheat oven to 375°F (190°C).
Remove boudin sausage from casing and crumble into a pan. Warm slightly if desired.
Roll out crescent dough and press seams together to form a single sheet.
Spoon boudin sausage down the center, sprinkle with cheese (optional).
Fold dough over to encase the filling and shape into a ring. Pinch seams to seal.
Brush with egg wash and sprinkle with Cajun seasoning.
Bake for 20–25 minutes or until golden brown.
Let rest for 5 minutes, garnish with green onions, and serve with hot sauce.
