Ingredients
  

  • 2 tbsp Instant coffee or espresso powder
  • 1 cup Granulated sugar
  • 1 cup All-purpose flour

Equipment

  • 1 Baking Tray Lined with parchment paper
  • 1 Mixing Bowl Medium-sized
  • 1 Measuring spoons For measuring coffee and sugar
  • 1 Spoon or Scoop For forming dough balls

Method
 

  1. Preheat oven to 350°F (175°C) and line a baking tray with parchment paper.
  2. Mix instant coffee and sugar in a bowl.
  3. Gradually add flour and mix until a dough forms. If crumbly, add water 1 tsp at a time.
  4. Scoop 1 tbsp of dough, roll into balls, and flatten with fingers or a fork.
  5. Place on tray with space between cookies.
  6. Bake for 10–12 minutes or until edges are golden brown.
  7. Cool on the tray for 5 minutes, then transfer to a wire rack to cool completely.

Notes

Use espresso powder for stronger coffee flavor.
Add-ins like chocolate chips or nuts can enhance texture and taste.
Cookies are naturally vegan.
