Method
- Preheat oven to 350°F (175°C) and line a baking tray with parchment paper.
- Mix instant coffee and sugar in a bowl.
- Gradually add flour and mix until a dough forms. If crumbly, add water 1 tsp at a time.
- Scoop 1 tbsp of dough, roll into balls, and flatten with fingers or a fork.
- Place on tray with space between cookies.
- Bake for 10–12 minutes or until edges are golden brown.
- Cool on the tray for 5 minutes, then transfer to a wire rack to cool completely.
Notes
Use espresso powder for stronger coffee flavor.
Add-ins like chocolate chips or nuts can enhance texture and taste.
